Carrot Cranberry Muffins


 Ingredients:

1 cup white flour
1/2 cup wheat flour
1 T baking powder
1/2 ts cinnamon
1/2 cup brown sugar
3 T honey
1 dash of salt
1/4 cup butter
1/3 cup chopped walnuts
1/2 cup shredded carrots
1/2 cup shredded zucchini
1/2 cup milk

Preparation: Mix dry ingredients. Add melted butter and milk, folding in. Add carrots and walnuts and stir until just blended. Bake for 15 - 20 minutes at 375.
